The Art of Frying

“Are you the Friar?” the stranger asked.

“No,” the figure replied. “I’m the chip-monk.”

Wok this way, please

Frying is one of the most basic forms of cooking and yet, surprisingly, it’s the one that seems to go wrong the most often. Cooks who have no problem handling a wok, still manage to make a mess of things when it comes to the humble frying pan.

There are generally two reasons for this. One is that the pan is often either too hot or too cold. The other is that the food is pretty much left to its own devices and either burns or fails to cook through. So here’s the number one tip:

Frying is not a passive activity.

Slapping something into the skillet and stirring occasionally is not the way to go. You need to agitate the food on an almost continuous basis, just as you would if cooking in a wok.

To fry successfully - that is, without absorbing too much fat - you must cook at a high temperature. In fact, the fat in your pan should be smoking when the food goes in but it should not be on the heat.

Two things will happen. There will be an instant sealing of the food which will reduce moisture loss and inhibit fat absorption, plus the pan will cool down slightly while still maintaining a cooking temperature.

You need to do two things: reduce the stove temperature to about half that which you used to heat the pan up - and keep the food moving. You can do that by shaking the pan, tossing the food in it or simply using a spatula. That’s all there is to it. Just imagine you’re using a flat wok.

Does this apply to omelets? Yes it does. They will cook quickly and well using this method. They will also burn easily if left so you need to work at continuously drawing the cooked mixture to the center of the pan and tipping the runny stuff towards the edge, returning the pan to the heat only when it’s obvious that cooking has stopped.

Just remember to always treat food in the frying pan as if it’s at boot camp. It can rest occasionally, but no longer than is necessary to reheat the pan it’s cooking in.

Deep fat frying

Apart from French fries - or ‘chips’ as the French chefs call them - just about anything deep fried needs to have some kind of covering to protect it. This is usually either batter or breadcrumbs.
Both are simple to do, but have somehow been made more complicated with the passing of time and the elevation of chefs to celebrity status.

These days breadcrumbs are easy. Just buy a packet of one-step breadcrumbs from your supermarket and follow the instructions on the pack.

Too easy? Okay, just once and for the fun of it, find some stale bread, reduce it to crumbs in a food processor (about half a loaf should do it), line it up with a plate of flour and a bowl of beaten egg.

Now coat the food in the flour, dip it in the beaten egg and coat it in the breadcrumbs making sure to use one hand for the dry and the other for the wet ingredients.

When you’ve had enough of that, try it my way :)

Keep it simple

Batter is nothing more than flour to which a liquid has been added and air has been introduced through sustained beating. And that’s it.

You don’t believe me?

Sydney’s famous fish restaurant, Doyle’s, is renowned for the crisp, light batter in which it’s fish are cooked. It consists of just three ingredients: flour, water and elbow grease.

The secret of a light batter is to beat in as much air as possible - which is one of the reasons that chilled soda water or beer work so well. They are already full of gas which remains trapped in the mixture as it expands on cooking.

There are no hard and fast rules about quantities. Simply beat enough liquid into the flour to give you the consistency you want. I like my batter mix to coat the back of a dessert spoon when dipped into it and immediately removed.

To coat, lightly dust the fish with flour and pat it in between your hands before dipping the fish into the batter. Hold the fillet at one end, drain off any excess liquid and transfer immediately into the fryer.

Too little heat spells defeat

Once again the trick is to get the fat really hot before doing any cooking. And I do mean hot. Like, smoking hot. The top temperature your fryer permits in other words. (If you cook using an open pan and basket please be very careful with this, fat fires are not a pretty sight).

Yes, I know there are cute little diagrams on the side of your cooker telling you what temperature to use for fish, what for chicken and so on. Ignore them. First heat your fat to the maximum, then add the food, then turn the dial back to the temperature suggested by your product manufacturer.

How do you know when the food is done? It floats to the surface of the fat. Take it out, drain it thoroughly, and remember that it will continue to cook for quite some time afterwards. Which is why chicken can be held until everything else is ready, while fish needs to be served almost immediately.

My Review of Groople- Group Rate Travel Search Engine

Over the years I have planned many trips and far too much time on the phone nailing down details on hotels and airlines for large group trips. I had always wished that booking for groups could be as easy as booking for individuals using online search engines. Until now there simply was nothing available to accomplish this goal. Enter Groople.com, a group rate search engine for hotels, airfares, busses, trains, and cruises. I decided to take it for a spin and see if it was indeed the answer to my prayers.

For my first attempt at using Groople I chose a similar location and duration to a trip that I had run earlier in the year. I chose a set of dates one month away and tried a search for the Los Angeles area for a block of twenty rooms. When the search came back I was not surprised to find roughly the same price ranges as what I found when planning the previous trip. Many of the hotels came up without definate rates, instead offering to send me personalized quotes if I registered and gave up my credit card number. For the hotels with definate rates, there was an interesting mix of everything from higher end suites hotels down to mom and pop style small hotels. All offered photos and decent information about the hotel. Not a bad start to my research. Plus one for Groople.

Then I dug a little deeper. Travelocity and Groople have been partners in the online booking business since February of 2005. I did the same search on Travelocity (except only for one room) and sorted the results by name of hotel. In comparing the Travelocity list to the Groople list I was very surprised. For several hotels the Groople price was actually much higher than the same hotel on the same dates for Travelocity. For others, the price difference was only a dollar or two in Groople’s favor. If you are buying a large block of rooms there is no reason that you should have to pay more than a person buying one single. Minus one for Groople.

In the end, my impressions of Groople were a very mixed bag. It is an interesting service, one that in my opinion has been badly needed. But I can’t help but think that I would still get a better deal calling the individual hotel and negotiating a price over the phone. Plus, going directly to the hotel sales manager gives you a much better feel for a property, and it is always a good idea to build a relationship with your hotel sales manager, especially if you are unfamiliar with the area you are traveling to. Groople and Travelocity are great places to start when planning your next group trip, but in my opinion you should still consult the local hotels directly rather than booking your group online unless you happen to find an incredible deal or don’t want to make the extra effort.

Common Presentation Habits to Avoid

In this article I discuss some of the common habits that speakers unknowingly exhibit while presenting, how to spot them, and ways to overcome them.

Do you look at your watch to check the time? Time is extremely important when we are presenting. We don’t want to talk past our limit, but we do want to fill the time we are expected to fill. This causes many presenters to look at their watches continually. This causes the audience members to start looking at their watches and become more concerned with the passage of time than the important information we are trying to impart.

There are several ways to work around this distraction. If you have a lectern or a table, you can place a small travel clock that it easy to read from a distance, so that a quick glance will be inconspicuous. Another aid is to ask a friend to sit fairly close to the front of the room and give an agreed-upon signal when you have five to ten minutes remaining, so you can start your closing without rushing.

Banish the use of filler words from your speech. By “filler words” I mean the ums, ahs, ers, you-knows, ands, buts, and any other word that you may be using to excess. Often we are not aware that we are filling our presentations with distracting words, so the best way to spot them is to ask someone to tape your presentation. Listen to the tape in the privacy of your home or office. You will be astounded. There may not be any “ums” or those kinds of fillers, but you may be saying a word over and over again. The first time I tried this, I found that I said “and” close to thirty times at the beginning of or between sentences. Once you are aware of this habit, you just need to stop and pause for a moment, and then clamp your mouth shut before you let one escape.

Keep your hands off and out of your clothing. I can’t begin to tell you how many speakers I have observed who put their hands in their pockets — and even jingle change. Talk about a distraction! I also witnessed a well-known woman speaker who kept smoothing her skirt and another who kept pulling the front of her jacket together. Neither was aware of what she was doing, but part of the problem arose because they were either nervous and/or uncomfortable with the clothing they were wearing. If you can find someone to video your presentation, you will be amazed with the little habits you have acquired over the years.

How to spot feng shui harmful to relationships

Relationships, like technology, are becoming more complicated all the time. There are so many factors to consider in relationships today that didn’t come into play in years past. Nowadays, the woman may be the breadwinner and it may be the man who stays at home with the kids. What hasn’t changed, though, is the importance and the need for close, secure relationships.

We often use relationships continue to define us. We seek out that all-perfect-soul-mate connection with that one true love. We also work to make close and unbreakable connections with our children, parents, friends, and siblings. It’s the connections that sustain us during times of trouble and when there are problems. That’s what makes every relationship — from romantic to familial — crucial. They are our lifelines in life’s stormy waters.

But what happens when relationships aren’t so smooth? Or, when unexplainable change begins to occur in relationships? That’s when it is time to look at your environment to see if there is something that could be causing friction in your dealings with those you care about. Fortunately, feng shui has a number of methods for making an environmental diagnosis of problems in relationships.

Check some of these ideas below to see if your relationships might be suffering — or if there is feng shui potential for a break-up. It’s worth looking into because we never want to see our relationships suffer, or worse, be lost altogether.

1. Is someone missing in your home?

In feng shui, the northwest is the sector of the man and the southwest is the sector of the woman. If either sector is missing, it is possible that either the man or the woman is also missing, such as being away at work all the time. One couple had the northwest corner of the home missing and the husband was always traveling or working overtime. One they moved to a new house, the husband was at home nights and their marriage was saved.

2. Is there a toilet in the man or woman sector?

Having a toilet in either the northwest or southwest corners of your home can create problems in the relationship. Either there will be fatigue or ill health, or the man or woman will be overworked and underappreciated. If this is the case in your home, be sure to boost the southwest or northwest corner of the living room to lift the energy of the person in question. Then, make certain that the bathrooms in these sectors have been handled appropriately (i.e., a plant in the southwest corner bathroom, or blue colors in the northwest bathroom). This will keep the negative toilet energy from impacting that person.

3. Are there problems with the whole family?

Check the east sector of the house and the east corner of the living room. The east is the sector of family relationships. If, for instance, there is a toilet in the east corner of the house, be sure to place red items in here or paint the room red. Or, you can decorate in white and metal elements. Reds and metal colors exhaust the negative energy of the toilet when it is in the east sector. If there is a fireplace, then this will exhaust the relationships maybe through frequent arguments. If you have one of these, put a picture of water over the fireplace to drown the fire that might be exhausting your family feelings.

4. If children are unhappy look west.

The west sector is the sector of the children. If there are water elements in this area, such as a shower or bathroom, it can cause problems and difficulties with the children. Increase earth elements in the home, such as by placing vases or beautiful stones in the west corner of the living room to boost the children. Likewise, you may also wish to add metal elements as well, such as metal vases or sculpture. If there is a kitchen or a fireplace, again, the water is helpful, but so are earth elements, such as globes, maps, vases, or stones.

5. Your house shape could be the culprit.

Many houses are irregularly shaped and have missing sectors. This can create problems with household members — particularly if the man or woman or children’s sectors are missing. Try to regularize the house and boost the missing sectors of your house by activating those sectors in the living room. For a missing southwest sector (romance, marital happiness, woman), northwest sector (man, breadwinner), or west sector (children, creativity) add a globe. Globes are great “anchors” for the southwest, northwest, and west sectors.

6. Check your heart — or center — sector.

The heart sector is a critical piece of the relationship puzzle in feng shui. Without a strong center sector, health, wealth, and relationships can all suffer. Many homes are built with an open center. This creates a “hole in the heart” of the home, and can cause heartbreak and divorce as well as bankruptcy. Double this if the home has a tree or plants growing in the center sector.

The center sector is an earth sector. Plants — and especially trees — destroy earth and may have played a pivotal role in the break-up of Jennifer Anniston and Brad Pitt. This was also a key element in a home that was designed by one couple. Going with a typical Spanish style home, they had a courtyard in the middle with a large fountain and big trees. This not only created a divorce, it also created bankruptcy. Although beautiful, this house was not worth the heartache it created.

If the house has a kitchen in the center, it can create severe disagreements and heated arguments. In this case, water colors, such as blue and black should be placed here as well as other water elements, such as an aquarium or urn of water. If a bathroom is in the center, then there should be a plant motif or colors (greens and browns) used here.

Day One:

Fruit: Eat all of the fruit you want (no bananas). Eat only your soup and the fruit for the first day. Drinks- unsweetened teas, cranberry juice and water.

Day Two:

Vegetables: Eat any fresh, raw or cooked vegetables and as much as you want.

Try to eat leafy green vegetables and stay away from dry beans, peas and corn.

Eat all the vegetables you want along with your soup. At dinner, a big baked potato with butter can be eaten. Do not eat fruit.

Day Three:

Mix Days One and Two: Eat all the soup, fruits and vegetables you want but No Baked Potato.

Day Four:

Bananas and Skim Milk:

Eat up to eight bananas and drink as many glasses of skimmed milk as you want on this day, along with your soup.

Day Five:

Beef And Tomatoes: Ten to twenty ounces of beef and up to six fresh tomatoes can be eaten.

Drink at least 6 to 8 glasses of water this day to wash the uric acid from your body.

Eat your soup at least once this day. You may eat broiled or baked chicken instead of beef (no skin-on chicken). If you prefer, you can substitute broiled fish for the beef on one of the beef days (but not both).

Day Six:

Beef and Vegetables: Eat to your heart’s content of beef and vegetables this day. You can even have 2 or 3 steaks if you like, with leafy green vegetables. No Baked Potato. Eat your soup at least once.

Day Seven:

Brown rice, unsweetened fruit juices and vegetables: As much as you want.

It’s over, and you will have lost weight!

If it sounds easy, but wait until you try it! The cabbage soup diet is not easy for many dieters but the results are well worth the effort.

Ingredients:
6 Large Green Onions

2 Green Peppers

1-2 Cans Diced Tomatoes

1 Bunch of Celery

1 Package Lipton Onion Soup Mix

1-2 Cubes of Bouillon (if desired)

1 Cabbage Head

Directions:

1) Cut the vegetables into small pieces and cover with water, you can also use V-8 juice.

2) Boil the ingredients fast for 10 minutes.

3) Reduce to simmer and continue cooking the cabbage soup until all of the vegetables are tender.

Season the cabbage soup to taste with salt, pepper, garlic powder, parsley, or whatever spice you want to add.
